For the sixth year in a row, Madrid will turn into the gastronomic capital of the world. During four action-packed days, the stages of the Palacio Municipal de Congresos Campo de las Naciones will serve as a platform for highly prestigious chefs. madridfusion 08 boasts an irresistible programme under the incisive title: gastronomy, internet and the new technology.
We live in an age of communication and the permutations of this can be clearly seen in haute cuisine as changes get under way.
We will talk about the role of Blogs and the new era of gastronomic criticism; about the use of mobile phones for restaurant promotion; about proximity marketing and urban blues zones; about the future of cookery on the web, and about computerized restaurants and on-line bookings. In short, we will talk about the alternative business opportunities provided by the internet, in the new gastronomic cyber space.
We will discuss inexpensive bistros: low-cost haute cuisine; also new fuels made from olive stones and the rotisserie revolution; as well as the use of fish leftovers (marine trash-cooking); and radical minimalism cuisine together with acidified cuisine, the new frontier in taste; we will also talk about magic sauces made from olive oil and the rituals of eating with your fingers, in the restaurants.
Scandinavia is this year's guest region. Five of their greatest chefs will descend on madridfusion with all the creativity and zest typical of this region, bringing with them a clear message: anti-globalization tidbits and a respect for natural cuisine.
