Ton Cortés
Co-owner of Suca'l (Barcelona, Spain)

Master baker Tonatiuh Cortés Ortiz, better known as Ton, was born in Mexico City in 1980 and travelled to Barcelona to study medieval music, but flour and fermentation crossed his path.
Suca'l obrador was born in a bakery opened in 1926, which until recently had a wood-fired oven. Ton Cortés and his team of bakers produce a range of breads and pastries using sourdough and organic flours.
Ton Cortés, his sister Zitaima Cortés and Manel Benazet are the owners of Suca'l. In addition to the main production workshop in the Sant Andreu neighbourhood (Barcelona), they currently have three other premises in Barcelona itself.
In 2019 they won the prize for the best panettone in Spain, and in November 2021 they came eighth in the Coppa del Mondo Del Panettone held in Lugano. In 2023, Ton captained the Spanish team at the Panettone World Championship, where he and the rest of the team won the silver medal for chocolate panettone and the bronze medal for traditional panettone. In November 2024 he won the prize for the best traditional panettone in the world in Milan.
