Juan Viu is a leading figure among a new generation of Andalusian chefs.
Born in Barbate (Cádiz) into a family with ties to the restaurant industry, Juan Viu's mother runs the family confectionery shop, Confitería Tres Martínez. Growing up surrounded by ovens, dough and sweets instilled in him a sensitivity towards ingredients, traditional flavours and the craft from an early age. He later trained at the Seville School of Hospitality.
He gained experience at several prestigious restaurants, including Aponiente, José Carlos García Restaurante and Lillas Pastia. In 2021, he was a finalist for the ‘Revelation Chef’ award at Madrid Fusión, further consolidating his position as an emerging figure in Spanish gastronomy.
The opening of Mare in 2023 saw Juan Viu realise his vision of a cuisine that pays tribute to the sea, the traditions of Cádiz and the flavours of home. In an intimate, minimalist space in Plaza de la Candelaria, Cádiz, he offers a tasting menu that changes according to the market and the day's catch, featuring produce sourced from the local fish market and gardens. His style is notable for its balance between tradition — homemade stews and recipes passed down through generations — and refined technique. In 2025, his work was recognised with his first Michelin star.
