INGREDIENTS (to serve 4)
4 large red prawns
100 gr melon
Grated orange and lemon rind
Remove the heads from the prawns and peel. Cut into two and add the ginger oil. Chill. Liquidise the tomatoes and blend with the prawn heads. Strain and chill. Cut the melon into fine slices and sprinkle with the grated orange and lemon rind.
Serve the cold prawns and the thin slices of melon. Garnish with herbs and pour over the cold prawn soup.
