Chef at Fiesta (Lima, Peru)

Héctor Solís started work at the bottom in his father's restaurant aged only 13 and it was his father who taught him the basics of the trade he perfected at Le Cordon Bleu.

He opened Fiesta, a restaurant specialising in regional Chiclayo food, in Lima in 1996, and it gradually became one of the city's best eateries.  Traditional cuisine and the sea are the hallmarks of this gastronomic concept which developed alongside other establishments in Tacna in southern Peru, and in Trujillo to the north. In 2013 Solís also opened an informal restaurant after the style of the old northern spicy eateries serving up traditional fare.

Chef Héctor Solís has become the maximum exponent of Chiclayo food. He has also written a book, “Lambayeque, la cocina de un gran señor”,
