He has been exposed to the working environment of the family oven since an early age.
The son, grandson and great-grandson of bakers, he has always had respect for the world of cakemaking and baking. He had specific cookery training with Pepe Rodríguez in El Bohío and with Santi Santamaría at El Racó de Can Fabes. He undertook his first post with responsibility as head chef in the Madrid Hotel Husa Princesa's Malvasia restaurant, and then went back to the family business and set up the Palio restaurant, which he co-owns with brother Isaac. Monedero has travelled Europe, teaching and making bread.
