He took the industrial plunge with Pere Gallés, implementing the technology of frozen doughs and pre-baked bread in Spain. At Europastry, where he is now head of R+D, he is working on a line of artisan breads known as Cava, with km 0 ingredients and constant priority to sustainability with a zero carbon footprint. He admits his keenness to "preserve tradition and the profession, securing an industrial application with ranges such as Saint Honoré, Gran  Reserva, Cristallino and Burger”.
