After more than 35 years of professional experience as a chef, Juan Carlos Menéndez has worked alongside top chefs on TV gastronomy programmes.
Since 2010 he has focused on gluten-free desserts and bread, and has consolidated this activity by means of research and success in improving the quality of this kind of product. In this respect, he created the first 100% gluten-free baking school, “El Espíritu del Bosque”, where he teaches internationally online, and has also written a much acclaimed book, "Pan Casero Sin Gluten”, now in its third edition, and co-founded “Massa Mater obrador sin gluten”.
