Gianluca Fusto is one of the big names in Italian pastrymaking, and a professional chef with a substantial commitment to teaching the younger generation.

Fusto has a particular weakness for working with chocolate, and homes in on the last detail of all his presentations with a balanced, minimalist trendsetting style. He was the first foreign cakemaker to gain entry to the École du Grand Chocolat Valrhona, in 2003, aged only 28, where he worked with food chemists, physicists and engineers and acquired the methodical approach to sweetness which is now one of his main hallmarks.
