Alejandro Chamorro has come up with culinary fare based on the constant transformation of local produce and the vast gastronomic culture of Ecuador.
Chamorro, born in Ecuador, worked at a number of restaurants in Europe and Latin America to learn the trade before conceptualising his own culinary personality. He then returned to Quito with the firm conviction of putting together ingredient/identity cooking with an innovative perspective of Ecuador's time and space.
This was the idea that launched Nuema (Quito) in 2014, a project shared with Pía Salazar in the pastry section. An offer they hope will serve to pay homage to the country's produce nationwide, and showcase cookery as a driving force of Ecuador's culinary identity. The project's consistency has earned them a place on the prestigious list of Latin America's 50 Best Restaurants, the first Ecuadorean restaurant in history to gain such recognition.
