His Koks** restaurant is at the remotest location on the planet, the Faroe Islands, a wild expanse flooding Ziska's cuisine.
This chef, born and bred in the Faroe Islands, who won the Nordic Countries' Michelin Young Chef Award in 2019 aged only 29, worked and learned in the kitchens of the three-star restaurant Star Geranium (Denmark) and the two-star eatery Mugaritz (Spain).
Ziska insists on representing the unique identity of the Faroe Islands through his cuisine, and so he and his team - also natives of the islands - opened KOKS, a restaurant which is fully integrated in its surroundings, offering a culinary fare based on local ingredients. It is sea-based fare, which has already earned the recognition of the French guide in the form of two Michelin stars.
At present the restaurant is temporarily located in Ilimanag (Greenland) while a new outlet is being built in the Faroe Islands.
