This chef's aim is to promote the culinary culture of Castile-La Mancha and the rural way of life, which he defends passionately.

José Antonio Medina's passion for cooking runs in the family. He spent his childhood in his parents' house in Puebla del Príncipe (Ciudad Real), where he was nourished by his mother's delicious recipes, who taught him the culinary basics of the Castilian recipe book. 

He went on to learn in the kitchens of some of the most prestigious restaurants in Castile: Jesús Monedero (Palio), Antonio Pintado (Granero) and, above all, Iván Cerdeño.

This is how José Antonio came to be in charge, first of the kitchen of the inn that the Medina family has owned since 1998 in the heart of the Montiel countryside, and now of the restaurant of the small hotel complex that the family runs in the heart of the Castile-La Mancha desert.
