Fourth generation of a family of pastry chefs who remain faithful to their most emblematic dessert, the Russian cake.

Although she studied philosophy, Sura (a nickname her mother gave her because her name is Rosa) chose to join the family business: the Pastelería Ascaso. A benchmark in the sweet world, born 130 years ago in Huesca, whose most famous creation is the Russian cake, whose original recipe is still a secret in the Ascaso bakery and which will celebrate its 50th anniversary in 2024. 

Their commitment to innovation and research into new formulas based on traditional recipes has made Pastelería Ascaso a solid point of reference for the sweetest gastronomy in Spain, and the original shop in Huesca has been joined by one in Zaragoza and another in Madrid, in the Thyssen Museum.

Their 100% natural creations follow the principles of the 'gourmandise raisonnée' of nearby France and have won several awards, including the Vicente Ascaso Memorial Award from the Royal Academy of Gastronomy for best pastry chef.
