Jordi Roca defines himself as a "dessert maker" because he makes desserts, not cakes. A personal interpretation of his profession.

His training in the world of confectionery began as a dilettante, not an academic one. With Damian Allsop, a talented Welsh pastry chef who was in charge of desserts at El Celler de Can Roca in the late 90s, he understood the importance of sweet cuisine, its specificity and uniqueness. 

His work at El Celler de Can Roca has won him numerous prizes and awards, but he continues to expand his sweet universe at the Rocambolesc ice cream parlour, which he opened with his wife Alejandra Rivas, and at the Casa Cacao chocolate factory, where he works alongside Lorenzo Turina, a master chocolatier with whom he is immersed in the "bean to bar" process.
