Mads Refslund is a Danish-born chef known for his pioneering contribution to the New Nordic Cuisine movement.

Born in Denmark, Refslund's culinary career has been marked by his passion for innovative and sustainable cuisine. Refslund gained international recognition as one of the co-founders of Noma. In addition to his work at Noma, he has collaborated with other renowned chefs and has been involved in various culinary projects around the world. Mads opened the restaurant ILIS in New York in September 2023. ILIS was named La Liste's Most Important Restaurant Opening 2024 and Esquire's Best Restaurant 2023 by its Best New Restaurant List.

His culinary philosophy focuses on creating dishes that capture the essence of the Nordic landscape, showcasing the flavours and textures of the region's diverse ingredients. His innovative and experimental approach to cooking has earned him a reputation as a culinary pioneer.
