Originally from Galicia and an expatriate for 14 years, Alberto Segade has worked in fine restaurants such as Scott's and Fera at Claridge's Hotel in London and Racine** in Reims, Champagne. For the past four years, the Galician sommelier has been developing his career in Copenhagen, first at Jordnær** and for the past three years at Kadeau** as head sommelier alongside chef Nicolai Nørregaard.
