He became famous on television, but is recognised and appreciated for his work in La Tasquería, the “offal” temple of Spain.
Javi Estévez has cooked professionally for almost 20 years. His training commences in the Centro Superior de Hostelería de Galicia, after which he does stages in Tragabuches and El Bohío. Subsequently he enters the team at Villena restaurant (Segovia), where he remains under the counsel of Julio Reoyo for more than two years as head of the kitchen.
In 2013 he participates in the first edition of the Top Chef España television programme where, in addition to earning fifth place, he helps Begoña Rodrigo to win the final. Commencing his personal project in February 2015, La Tasquería de Javi Estévez, in which he shows his commitment to the offal cuisine that represents the people of Madrid so much. His work in La Tasquería earned him the Madrid Fusión 2016 Cocinero Revelación Award and one Michelin Star.
Estévez also runs a gourmet snack and sandwich restaurant in Madrid -John Barrita- and El Lince, a restaurant with a more popular offer where offal also has a space for itself.
