Madrid's only three-starred chef, the enfant terrible of Spanish gastronomy, is back at a gastronomy congress.
Born in Madrid in 1980, Dabiz Muñoz is one of the leading lights of Spanish cuisine. With his Diverxo restaurant, which has three Michelin stars (the only restaurant in the capital with the highest rating), Muñoz has never ceased in his desire to create dishes that he neither classifies nor indexes, as well as new concepts such as StreetXo in Madrid. A model that he transferred to London, although it has since closed, and to which he added Goxo Barcelona for a time (also closed) and a delivery service - Goxo - that diversified with a food truck.
Before he met with success, Muñoz trained in Viridiana (chef Abraham García is Dabiz's culinary "father") and Chantarella in Madrid, and starred restaurants in London such as Orrery, Hakassan, Nobu or Nahm. Among other awards, Muñoz was Madrid Fusión 2008's Revelation Chef, he won the National Gastronomy Prize for Best Kitchen Chef in 2009, he was Best European Chef 2014, and won the 2014 “Prix du Chef de l´Avenir”.
After years of hovering close to the number one spot, in 2021 he finally made top of the list in “The Best Chef Awards”, the same year in which the prestigious French guide La Liste awarded him its Innovation Prize.
