Chef at Mesón Sabor Andaluz* (Alcalá del Valle, Cádiz, Spain)

Trained at La Cónsula in Málaga, Pedro's first apprenticeship was with Tragabuche. He also worked in the kitchens of Andoni L. Aduriz, Benito Gómez and Ricard Camarena, where he was head chef for four years.
From there he moved to Cadiz to set up his first personal project, Almanaque, with his friend Juan Carlos Borrell. Shortly afterwards, however, his parents' restaurant, Mesón Sabor Andaluz, was awarded a Bib Gourmand and Pedro decided to return home and join his mother in the kitchen. His work earned him recognition as the Revelation Chef of 2022 at Madrid Fusion.
Mesón Sabor Andaluz is not a strictly vegetarian restaurant, but rather a place where the essence of the Sierra de Cádiz is reflected in the cuisine. Its efforts have been rewarded with its first Michelin star in 2024.
