Canadian-born Dylan Watson-Brawn's culinary journey began at the age of 16 when he dined with his parents at Tokyo's esteemed RyuGin restaurant and dared to ask to apprentice under acclaimed chef and owner Seiji Yamamoto. This early experience had a profound effect on his cooking style, cementing him in Japanese culinary techniques and a philosophy that emphasises the purity and seasonality of ingredients.
After honing his skills at world-renowned establishments such as New York's Eleven Madison Park and Copenhagen's Noma Restaurant, Dylan moved to Berlin, Germany. In 2014, he co-founded Ernst with partner Spencer Christenson as a small dining experience, which officially opened its doors in 2017.
Ernst's commitment to sourcing the best local produce and applying Japanese techniques to European ingredients has earned it considerable acclaim. The menu changes daily and is constantly evolving to reflect the seasons and produce. The restaurant was awarded a Michelin star in 2019, which it still holds today.
