Carlos Gumiel was born in Pastrana and grew up in his maternal grandparents' pastry shop. He later studied cooking at the Hotel Escuela Madrid. He began his career by studying in La Broche and Las Rejas, as well as travelling the world.
He is currently the owner and chef of the Biosfera Restaurant (Guadalajara) and the Gardens of the Palace of the Marquis of Villamejor, in Guadalajara.
Local products such as honey and lavender, produced in the heart of the Alcarria countryside, are a source of inspiration for his cuisine, in which he seeks to innovate without losing his roots.
