Fernando Sáenz is the director and owner of Obrador Grate and the dellaSera ice-cream parlour, places he created 23 years ago and from which he insists on careful and slow elaboration.

The dellaSera ice cream parlour offers a gastronomic vision through its ice creams made with local ingredients and unique producers, an ice cream parlour where the exotic is the local, and from which have come proposals such as "fig tree shade", "summer walk" or "ice cream made with white wine lees fermented in barrels", among others.

For 22 years, Obrador Grate has been proposing personalised and unique recipes for gastronomy to accompany the dishes of chefs in all the Spanish provinces, an ode to craftsmanship at its best, creating more than 100 different exclusive recipes for its clients each season.

Among the awards it has received are the National Gastronomy Award for the best pastry chef and the Best Sweet Shop in Spain by Madrid Fusión.
