Chef and founder of Lov Ferments (Barcelona, Spain)

This Barcelona-born chef's obsession with fermentation began at the age of 15, when he experimented with brewing beer in science class. His career has seen him work as a travelling chef in countries such as Iceland, Sweden and France, including at elBulli Lab.
In 2019, he and his partner Nicolas Lavallière founded Lov Ferments, a company specialising in healthy fermented beverages. The company produces kombucha in different flavours and develops innovative alcoholic beverages in collaboration with renowned chefs.
Ruiz is also the author of the book 'Fermentar' and teaches fermentation courses that have been attended by chefs from renowned restaurants such as Mugaritz and Aponiente. His aim is to revolutionise the world of soft drinks by creating probiotic drinks that have a positive impact on health and the planet.
