Akrame Benallal's style is marked by his Mediterranean roots and travels. Combining tradition and modernity with boldness and precision, he has become an indispensable figure in today's cuisine.
Born in France to Algerian parents, Akrame discovered his passion for cooking at a young age. At fourteen, he decided to devote himself entirely to cooking, training at renowned establishments such as La Poste de Molineuf and L'Orangerie du Château de Blois, and honing his skills under the guidance of renowned chefs like Pierre Gagnaire, Alain Solivérès, and Ferran Adrià.
By the age of twenty-five, he was head chef at Château des Sept Tours. Shortly afterwards, he started his own project with Le Trendy, which evolved into L'Atelier d'Akrame. In 2011, he opened his eponymous restaurant, Akrame, in Paris, a space where his talent could flourish. Success came quickly; he earned his first Michelin star in 2012 and his second in 2014, establishing himself as a benchmark in contemporary gastronomy.
Visionary and constantly evolving, he has diversified his culinary universe with concepts such as SHIRVAN and A'Plum, taking his cuisine to cities such as Hong Kong, Manila, Baku and Marrakech. In 2017, he published Instincts, a book that summarises his intuitive and creative approach.
