Coco Montes is a Madrid-born chef who trained at Le Cordon Bleu in Paris, completing his culinary education with a pivotal placement at the renowned French restaurant L'Arpège, run by chef Alain Passard. Prior to opening Pabú, Montes gained experience in high-end kitchens in Spain, including Zalacaín and Azurmendi, as well as internationally, where he managed projects in cities such as Shanghai, Los Angeles and Sydney. This international experience, combined with his classical training, has enabled him to develop a versatile, technically proficient cuisine that showcases the finest ingredients.
At Pabú, he brings his culinary philosophy to life with a 'micro-seasonal' approach based on ingredients that change daily according to what the market or local gardens have to offer, with a strong focus on vegetables, delicate textures, and absolute respect for freshness.
Thanks to this bold approach, Pabú earned a Michelin star in its first year, and Montes was recently recognised by the International Academy of Gastronomy with the 2025 Prix au Chef de l'Avenir award for his ‘respectful, lively cuisine and rigorous commitment to micro-seasons’.
