Cooking in a changing climate

The talk will focus on the definition of ecological cooking and the choice of using invasive species.

Faced with the huge number of invasive species and the environmental impact they have on the Venetian lagoon and its ecosystems, Chiara Pavan and Francesco Brutto, committed to the environment, have decided to incorporate these species into their menus, thus reducing their presence. 

This is just one of the many actions they have undertaken in their quest for environmental sustainability, including their own vegetable garden, fermentations, reuse and waste reduction.
