The goal of Tabú is to present the plant world in a new, flavourful and authentic way.
They have a unique approach to haute cuisine, interpreting what nature offers each day rather than repeating dishes. They work through conscious improvisation, prioritising the ingredient over technique. Their daily challenge is to capture the perfect moment of each ingredient before it disappears, allowing its state — its aroma, texture, ripeness and energy — to inform their culinary decisions.
