Circular

The Mil project on the high plains of Peru is a 360º panorama. A project which emerged from cookery, but which is now spreading and transforming. Virgilio, Pía and Malena will be telling us how the process is being carried out.

Life is circular. Everything moves in circles, from the two main seasons in the year to the life cycles of thousands of species, from a focal action point as a huge core, and this is how Mil is addressing the ups and downs of Peruvian territory and their complexities for a single purpose: to change the status quo, redesign the system in which a gastronomic space normally functions, and map out a future based on a deep understanding.

The Mil project moves genuine immense courses of action, creating a large circuit flowing towards Lima. Applied to Casa Tupac, and at Central and Kjolle. Its function is to act as a centre of ideas, of tasks carried out and tasks pending, circles to be closed in the future.
