Rum's gastronomic DNA

The gastronomic DNA of Guatemala's rums is revealed for the first time, in a survey by Chartier World LAB.

During this talk we will learn to avail ourselves of science and knowledge to work out the best way to create recipes and cocktails which bring out the very best in the rum and the food. We will be apprised of information on rum's aromatic profiles (its genuine aromatic DNA) to understand how they are created at the molecular level for them to be reconstructed in true gastronomic creations giving rise to new innovative concepts.

Chartier will be accompanied by Guatemala's rum ambassador Lorena Vásquez (Ron Zacapa), Giacomo Gianotti (Bar el Paradiso, #1 World´s 50 Best Bars 2022), Sergio Díaz from the Soublime restaurant (Guatemala's Best Restaurant 2022 and #31 in Latin America's 50 Best Restaurants 2022) and François Chartier (founder of the Chartier World LAB).
