Catch of the day. Exploring North Sea creeks and the traditional cuisine of the terroir

A son of the North Sea, this chef draws inspiration for his cuisine from the waters of the North Sea.

There is a story behind every dish. Every chef knows this, and Willem Hiele will tell us the story behind his signature dish: North Sea shrimp soup. A dish that for him is full of memories from his childhood.

This peculiar shrimp, characteristic of the North Sea, lives in shallow waters, which can also be slightly brackish, and feeds at night. During the day they remain buried in the sand to avoid predators.
