The lack of resources as an opportunity to open a door to creativity.

Bagá is a small space where technical and technological limitations have marked the evolution of its cuisine and, above all, of the way of looking at the product, and how these limitations mark the day-to-day, but can be overcome with creativity, will be the subject of this talk.

Bagá's kitchen is in direct contact with the dining room, which means that during service it is impossible to continue cooking, frying or seasoning for long periods of time, which can give off odours. For this reason, we work on preparations that do not involve the misuse of water, in order to obtain the best flavour in the shortest time, using the essence of the food, its natural water, to obtain the purest flavour, thus saving time, space and resources in the preparation of the dishes.
