Chinese doughs

With Felipe Bao, we will explore the world of Chinese doughs, from classic noodles to various dim sum doughs or baozi, the typical Chinese buns.

Bao will explain the importance of parameters such as temperature, processes and proportions in the preparation of these doughs. 

The fineness of the dough, its elasticity and sponginess will be demonstrated live in the preparations that Bao will make on the stage of the Madrid Fusión Pastry.
