Pickle is a technique that originated in Arabic cuisine but is now part of Mediterranean gastronomy. We will explore it with Vicky Sevilla.

Through her cooking and her dishes, Vicky Sevilla will take us through the history of pickle as a method of preserving food, the different ways of preparing it, and some of the nuances that can be achieved by using different vinegars and citrus fruits, as well as incorporating fresh and aromatic herbs into the recipes.
