Seasonality takes on a new meaning in the green cuisine of Humus x Hortense, where they not only cook according to the seasons, but also create a menu based on 24 micro-seasons to keep up with the rhythm of the land. 

All the dishes are prepared once they know what will be available and what their suppliers can offer them. And from there, not only are the gastronomic proposals prepared, but also the liquids with which they will be paired.
