José Antonio Medina proposes an approach to rural gastronomy that looks at its environment through the red-legged partridge. A product that has always been present in Medina's family, not only through partridge hunting, but also through all the recipes associated with it. 
  
Medina will talk to us about how they work with partridge in his house, from the traditional side to its evolution towards more modern versions.
