The evolution of the pizza

Franco Pepe is part of a family with more than three generations that have been using the wooden trough, the dough, the wood-fired oven and the pizza cooker; the same ones that bear witness to tradition.

Pepe in Grani's project is based on research and selection of the raw material and the human factor, where he experiments and integrates among other themes and methods: the frying technique, the electric oven, the structure of the equipment and the scientific contribution, on which he has been working for years, to build the ideal menu of "Pizza Mediterranea".
